During the Water Mountain process, caffeine is extracted by immersing the green coffee beans into water. The water used comes from the glaciers of the highest mountain in Mexico, the Pico de Orizaba volcano, also known as Citlaltépetl, in the State of Veracruz, Mexico. This process allows to obtain 99.99% caffeine free coffee beans but also keeps the beans’ properties (flavour, aroma, acidity, and body). A special filter separates caffeine from the water so that the latter can be reused in further processing.
