Huehuetenango is one of Guatemala's three non-volcanic regions, known for its high altitude and dry climate, making it ideal for coffee production. The unique microclimate, created by warm air from Mexico mixing with cool air from the Cuchumatanes Mountains, allows coffee to thrive up to 2,000 meters.
Due to its remoteness, most producers process their own coffee. The region's abundant rivers make it easier to set up mills, while its geographic conditions contribute to exceptional coffees with distinct acidity and fruity flavors. SHB (Strictly Hard Bean) refers to coffee grown above 1,350 meters, while EP (European Preparation) means the coffee is hand-sorted to remove defects and foreign material. |
